[ RECIPE ] Tofu & Chickpea Teriyaki Stir-Fry

A super simple dish to make, I cooked this for lunch with the leftovers I had before the next weekly shop. I like to use what I’ve got and then see the bare shelves! This dish is completely vegan and is really so easy to put together! Enjoy! Adam x⁠

[ RECIPE ] Tofu & Chickpea Teriyaki Stir-Fry

Serves: 4 Servings
Ingredients
  • ▪️Rapeseed Oil⁠
  • ▪️400g Firm Tofu (cut into small cubes)⁠
  • ▪️4 tablespoons Cornflour⁠
  • ▪️1 Red Onion (sliced)⁠
  • ▪️200g Can Chickpeas (drained)⁠
  • ▪️Salt & Freshly Ground Pepper⁠
  • ▪️1 teaspoon Smoked Paprika⁠
  • ▪️1 teaspoon Garlic Granules⁠
  • ▪️50g Edamame Beans⁠
  • ▪️100g Cherry Tomatoes⁠
  • ▪️1 tablespoon Teriyaki Marinade⁠
  • ▪️1 tablespoon Agave Nectar⁠
  • ▪️1 tablespoon Dark Soy⁠
  • ▪️1 teaspoon Rice Wine Vinegar⁠
Instructions
  1. In a large enough l bowl add the cornflour along with the tofu pieces and mix well until fully coated. Meanwhile heat a large frying pan on a medium-high heat and add a tablespoon of oil. Once the oil is hot add the tofu pieces and fry for 8-10 minutes, turn regularly and then set-aside.
  2. Add an additional tablespoon of oil to the frying pan and add the sliced onion, fry for 3-5 minutes until softened then add the chickpeas, salt, pepper, smoked paprika and garlic granules and mix well. Cook for a further 5 minutes. ⁠
  3. Next add the remaining ingredients and fry for a final 5 minutes, then serve. ⁠
