[ RECIPE ] Crumpet Pizzas

These crumpet pizzas are super straightforward to make and are perfect for a quick snack or evening meal. The sponginess of the crumpets allows the tomato sauce to absorb really well and really brings out the flavour of the toppings. Speaking of which, the possibilities are endless! Enjoy!

[ RECIPE ] Crumpet Pizzas

Serves: 2 Servings
Ingredients
  • 6 Vegan Crumpets
  • 100g Tomato Passata
  • 1 tablespoon Caster Sugar
  • 1 tablespoon Dried Oregano
  • Salt & Pepper

  • Toppings
  • Red Onion (diced)
  • Cherry Tomatoes (quartered)
  • Vegan Cheese (grated)
  • Jalapeños
  • Seitan (chopped)
  • Roasted Peppers
  • Sun-dried Tomatoes
Instructions
  1. Pre-heat the grill to high then toast the crumpets for 4-5 minutes.
  2. Mix the remaining ingredients (not the toppings) into a large enough bowl to make the sauce and stir well.
  3. Add two tablespoons of the sauce on each toasted crumpet, then add the toppings of your choice.
  4. Place the crumpets under the grill for 4-5 minutes or until the cheese has melted, then serve with a salad.
