[ RECIPE ] Baba Ganoush & ‘Halloumi’ Tofu Pittas

Definitely a favourite of mine! I love all the different small bowls and options you can choose from to really stuff the pitta (and then your face!). The Baba Ganoush dip is legendary and you won’t go wrong with the crunchy carrot and juicy tomatoes that accompany it! Enjoy x


[ RECIPE ] Baba Ganoush & 'Halloumi' Tofu Pittas

Serves: 4 Servings
Ingredients
  • Tofu Marinade Ingredients
  • ▪️Firm Tofu (sliced thinly into 'halloumi' like pieces)
  • ▪️3 tablespoons Extra Virgin Olive Oil
  • ▪️1 tablespoon Red Wine Vinegar
  • ▪️1/2 teaspoon Garlic Granules
  • ▪️1 teaspoon Dried Oregano
  • ▪️Salt & Freshly Ground Pepper

  • ▪️2 Aubergines⁠
  • ▪️Frozen Chips⁠
  • ▪️2 Garlic Cloves⁠ (leave skins on)
  • ▪️2 tablespoons Olive Oil⁠
  • ▪️1 Red Onion (sliced)⁠
  • ▪️100g Cherry Tomatoes (halved)
  • ▪️Small Handful Fresh Mint (chopped)⁠
  • ▪️1 Carrot (grated)
  • ▪️2 tablespoons Tahini⁠
  • ▪️Juice of 1 Lemon⁠
  • ▪️Salt & Freshly Ground Pepper⁠
  • ▪️1/2 teaspoon Ground Cumin⁠
  • ▪️1/2 teaspoon Paprika⁠
  • ▪️6 Pittas⁠
Instructions
  1. Pre-heat the oven to 200C. Whilst the oven is pre-heating place the tofu and marinade ingredients onto a large plate and set-aside.
  2. Next prick the aubergines a few times with a fork or sharp knife and add to a baking tray and bake for 1 hour. ⁠
  3. After 45 minutes is up, place the chips onto a separate tray and bake for the remaining time. Add the garlic cloves to the aubergine tray.
  4. Meanwhile, place a frying pan onto a medium heat and add a tablespoon of olive oil. Once hot, add the red onions and fry for 5 minutes, then add the cherry tomatoes for an additional 5 minutes. Place the contents into a small bowl along with the chopped mint and set-aside. ⁠At the same time add the grated carrot to a separate bowl.
  5. Fry the tofu slices for approximately 3 minutes on each side or until golden brown and slightly crispy.
  6. When the time is up on the aubergines, remove from the oven and set aside. Leave the chips in until cooked.
  7. Slice the aubergines lengthways to open, scoop out the cooked flesh and place into a large enough food processor or blender. Slice through the skin of each garlic clove and squeeze out into the food processor. Add the tahini, lemon juice, spices and seasoning then blitz until smooth. ⁠
  8. Toast the pittas then fill each with the baba ganoush, tofu, vegetables and chips.⁠
