It’s the end of my first week back at work and I survived!
To be fair it wasn’t too bad actually. My colleague filled the gap for me whilst I was sunning myself in beautiful Sorrento, which of course I was grateful for!
So much so in fact I ended up baking him my famous Flapjacks – which despite his strict diet of protein bars and creatine, think he appreciated 🙂
I’ve decided to re-define my recipes as they seem to be a bit all over the place up to this point in time. For instance, some are quite complex, others are a little too indulgent for what I originally setup the blog for.
Going forward my recipes will follow this basic mantra:
“Healthy. Simple. Delicious”
Pretty straightforward I’d say. But that’s what I’m about these days. You guys don’t want to have to spend endless hours in the kitchen, not when you can be in the gym of course!
The majority of my recipes can be made for a healthy dinner and can then be re-heated the following day for a tasty lunch or snack.
I believe the more of these types of meals you pack into your diet, the fitter and healthier you’ll become. Many people I speak to these days want to eat healthy but aren’t sure where to turn. Well this is the place.
Starting with this latest recipe. There’s not a great deal of ingredients involved and mostly everything goes straight into the pan once the initial prep is done. Anything that’s leftover can be enjoyed another time!
So I hope you enjoy this “Fried Halloumi, Chorizo & Black Eye Bean Salad” and have yourselves a great weekend.

- Olive Oil
- 1 Red Onion (sliced)
- 50g Chorizo (finely chopped)
- 1 Red Pepper (sliced)
- ½ teaspoon Chilli Flakes
- 1 Garlic Clove (crushed)
- 5 Tenderstem Brocoli Florets
- 200g Black Eye Beans (drained)
200g Halloumi (sliced)- Handful of Fine Green Beans (halved)
- Zest of ½ Lemon
- Juice of ½ Lemon
- Fresh Mint (chopped)
Serve with: Sweet Chilli Sauce (optional)
- Heat a large frying pan on a medium-high heat with enough olive oil to cover the base.
- Add the red onion and chorizo for a few minutes before adding the garlic, chilli flakes, red pepper & broccoli. Continue to cook for a further 8-10 minutes.
- Remove the contents onto a warm plate and add some additional olive oil to the frying pan.
- Add the halloumi slices along with the black eye beans and fine beans. Fry for 2-3 minutes then add the lemon juice and zest.
- Return the plate contents to the frying pan, mix well and add the fresh mint along with some sweet chilli sauce. Serve straight away.
