Ingredients
- 2 tablespoons plant-based butter
- 1 white onion (finely diced)
- 200g vegan-friendly chicken
- 1 garlic clove (crushed)
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon garam masala
- 1 teaspoon curry powder
- ½ teaspoon chilli powder
- 1 can chopped tomatoes
- 1 can light coconut milk
- 1 tablespoon agave nectar
- salt & freshly ground pepper
- top with fresh coriander
- basmati rice
Instructions
- Place a large frying pan on a medium-high heat then add the butter.
- Once the butter has started to melt add the onions then fry for 6-8 minutes or until golden.
- Add the vegan-friendly chicken and garlic then fry for 3-5 minutes.
- Next add all the spices and a little water (if the mixture is looking too dry) then cook for a few minutes before adding the chopped tomatoes, coconut milk, agave nectar, salt and freshly ground pepper. Simmer for 20-25 minutes and stir regularly (if you're making the dish with rice, start preparing this after 10 minutes of simmering).
- Once the time is up, top with fresh coriander and enjoy!
