Vegan Butter Chick'n

Ingredients
  • 2 tablespoons plant-based butter
  • 1 white onion (finely diced)
  • 200g vegan-friendly chicken
  • 1 garlic clove (crushed)
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon garam masala
  • 1 teaspoon curry powder
  • ½ teaspoon chilli powder
  • 1 can chopped tomatoes
  • 1 can light coconut milk
  • 1 tablespoon agave nectar
  • salt & freshly ground pepper
  • top with fresh coriander
  • basmati rice
Instructions
  1. Place a large frying pan on a medium-high heat then add the butter.
  2. Once the butter has started to melt add the onions then fry for 6-8 minutes or until golden.
  3. Add the vegan-friendly chicken and garlic then fry for 3-5 minutes.
  4. Next add all the spices and a little water (if the mixture is looking too dry) then cook for a few minutes before adding the chopped tomatoes, coconut milk, agave nectar, salt and freshly ground pepper. Simmer for 20-25 minutes and stir regularly (if you're making the dish with rice, start preparing this after 10 minutes of simmering).
  5. Once the time is up, top with fresh coriander and enjoy!
