[RECIPE] Tomato & Fish Stew

Tomato & Fish Stew

Serves: 2 Servings
Ingredients
  • Olive Oil
  • 1 Red Onion (finely chopped)
  • 2 Garlic Cloves (finely chopped)
  • ¼ teaspoon Chilli Flakes
  • 1 teaspoon Dried Oregano
  • 2 tablespoons Balsamic Vinegar
  • 1 Can Chopped Tomatoes
  • 1 tablespoon Tomato Puree
  • 200ml Passata
  • ½ tablespoon Caster Sugar
  • Salt & Freshly Ground Pepper
  • 1 teaspoon Paprika
  • 1 teaspoon Onion Granules
  • 2 Frozen Fish Fillets
  • 1 Can Mixed Bean Salad
Instructions
  1. Add a large casserole dish to a medium-heated hob along with some olive oil.
  2. Once hot enough add the chopped onion along with some salt, and cook for 2-3 minutes or until softened.
  3. Add the chilli flakes, oregano and balsamic vinegar then stir for a few minutes.
  4. Next add the chopped tomatoes, tomato puree, passata along with the sugar, then season well.
  5. Bring to the boil by increasing the heat and placing the lid on.
  6. Remove the lid and add the paprika and onion granules, then carefully place the fish into the mixture. Cook for 15 minutes.
  7. After the time is up, add the mixed bean salad for a further 5 minutes then serve.
