Ingredients
- Olive Oil
- 1 Red Onion (finely chopped)
- 2 Garlic Cloves (finely chopped)
- ¼ teaspoon Chilli Flakes
- 1 teaspoon Dried Oregano
- 2 tablespoons Balsamic Vinegar
- 1 Can Chopped Tomatoes
- 1 tablespoon Tomato Puree
- 200ml Passata
- ½ tablespoon Caster Sugar
- Salt & Freshly Ground Pepper
- 1 teaspoon Paprika
- 1 teaspoon Onion Granules
- 2 Frozen Fish Fillets
- 1 Can Mixed Bean Salad
Instructions
- Add a large casserole dish to a medium-heated hob along with some olive oil.
- Once hot enough add the chopped onion along with some salt, and cook for 2-3 minutes or until softened.
- Add the chilli flakes, oregano and balsamic vinegar then stir for a few minutes.
- Next add the chopped tomatoes, tomato puree, passata along with the sugar, then season well.
- Bring to the boil by increasing the heat and placing the lid on.
- Remove the lid and add the paprika and onion granules, then carefully place the fish into the mixture. Cook for 15 minutes.
- After the time is up, add the mixed bean salad for a further 5 minutes then serve.
