[RECIPE] Harissa Lamb Steak Salad

Serves: 2 Servings
Ingredients
- 2 Lamb Leg Steaks
- 2 teaspoons Harissa
- 100g Couscous
- Salt & Freshly Ground Pepper
- 20g Mozzarella (torn into small piece)
- 6-10 Cherry Tomatoes (quartered)
- 50g Sweetcorn
- Small Handful of Fresh Mint (chopped)
- 4 tablespoons Yoghurt
- 1 teaspoon Harissa
Instructions
- Start by pre-heating the grill to medium-high.
- Place the steaks onto a plate and fully coat with the harissa paste and once the grill is hot enough place under it for 6 minutes each side.
- Meanwhile make the couscous by combining enough boiling water to cover the couscous in a small bowl along with some salt & pepper. Cover the bowl with a lid or tea-towel for a few minutes.
- When the couscous is ready tip onto a large enough plate then remove the lamb from the grill and slice.
- Add the lamb slices to the plate along with the remaining ingredients.
- Combine the yoghurt with the harissa, add to the salad and serve.
