[RECIPE] Courgette, Halloumi & Couscous Salad

Ingredients
- 100g Wholewheat Couscous
- Salt & Freshly Ground Pepper
- 1 teaspoon Harissa Paste
- 40g Halloumi (sliced)
- Olive Oil
- 1 Courgette (finely grated)
- 4-5 Roasted Peppers (chopped)
- 4-5 Sun-dried Tomatoes
- 1 Chilli (de-seeded & finely chopped)
- ½ Lemon
Instructions
- Add the couscous to a small bowl along with the salt, pepper and harissa paste, then add just enough boiling water to cover. Place a dry cloth on top of the bowl and leave to absorb.
- Heat a frying pan with a little oil on a medium heat then add the sliced halloumi. Fry for 2 minutes each side or until golden.
- Add the couscous to a large enough bowl along with the grated courgette, peppers, tomatoes and chilli.
- When the halloumi is ready add this to the salad bowl.
- Squeeze the lemon juice over the salad and mix, then top with the lemon zest and serve.
