Fajita Pasta

Fajita Pasta

Serves: 2 Servings
Ingredients
  • 2 tablespoons Neutral-flavoured Oil
  • 1 Red Pepper (sliced)
  • 1 Red Onion (sliced)
  • 1 Brown Onion (sliced)
  • 100g Chestnut Mushrooms (sliced)
  • 200g Non-Chicken Pieces
  • 1 tablespoon Old El Paso Fajita Mix
  • 4 tablespoons Tomato Purée
  • 150ml Oat Single Cream
  • 200g Can of Black Beans (drained)
  • Handful of Frozen Sweetcorn
  • 200g Fusilli
  • Handful of Fresh Coriander
  • Fresh Salsa
Instructions
  1. Heat a large frying pan on a medium-high heat and add the oil.
  2. Once the oil is hot add the peppers and onions, fry for 8-10 minutes.
  3. Next add the mushrooms and non-chicken pieces and fry for a further 8-10 minutes.
  4. Now add the fajita seasoning and continue to cook for 2-3 minutes before adding the tomato purée, cream and black beans then stir and leave for 12-15 minutes.
  5. Whilst this is cooking cook the pasta according to packet instructions.
  6. When the time is up on the pasta add the sweetcorn to the frying pan, drain the pasta and combine with the cooked ingredients. Top with fresh coriander and salsa then serve.
