[RECIPE] Courgette, Halloumi & Couscous Salad

Serves: 2 Servings
Ingredients
  • 100g Wholewheat Couscous
  • Salt & Freshly Ground Pepper
  • 1 teaspoon Harissa Paste
  • 40g Halloumi (sliced)
  • Olive Oil
  • 1 Courgette (finely grated)
  • 4-5 Roasted Peppers (chopped)
  • 4-5 Sun-dried Tomatoes
  • 1 Chilli (de-seeded & finely chopped)
  • ½ Lemon
Instructions
  1. Add the couscous to a small bowl along with the salt, pepper and harissa paste, then add just enough boiling water to cover. Place a dry cloth on top of the bowl and leave to absorb.
  2. Heat a frying pan with a little oil on a medium heat then add the sliced halloumi. Fry for 2 minutes each side or until golden.
  3. Add the couscous to a large enough bowl along with the grated courgette, peppers, tomatoes and chilli.
  4. When the halloumi is ready add this to the salad bowl.
  5. Squeeze the lemon juice over the salad and mix, then top with the lemon zest and serve.
