Vegan Chicken Gyros
Ingredients
- For the vegan chicken marinade:
- 1 pack of vegan chicken (e.g. This Isn't Chicken)
- 2 tbsp unsweetened soya yoghurt
- 1½ tbsp red wine vinegar
- 1 tbsp garlic granules
- 1 tsp oregano
- salt & pepper
- 1 red pepper (sliced)
- 1 red onion (sliced)
- For the tzatziki:
- 5 heaped tbsp unsweetened soya yoghurt
- ½ cucumber (grated)
- Juice of ½ lemon
- 1 garlic clove (crushed)
- To serve:
- Cherry tomatoes (halved)
- Cucumber slices
- White pittas
- Chips
Instructions
- Marinate the vegan chicken with the marinade ingredients listed above for at least 45 mins
- Fry the peppers and onions until softened
- Add the vegan chicken and cook according to cooking instructions.
- Meanwhile, make the tzatziki.
- Fill the pittas with the vegan chicken mix, peppers and onions, tzatziki, fresh cherry tomatoes and cucumber and chips.
