[ RECIPE ] Vegan Butter Chick'n

Serves: 4 Servings
Ingredients
- Knob of Dairy-free butter
- 200g Plant-based Chicken
- 1 White Onion (finely chopped)
- 2 Garlic Cloves (crushed)
- 1 tablespoon Curry Powder
- ½ tablespoon Garam Masala
- 1 teaspoon Chilli Powder
- 1 teaspoon Ground Coriander
- 1 teaspoon Ground Cumin
- 1 Can Chopped Tomatoes
- 400ml Light Coconut Milk
- Salt & Pepper
- Fresh Coriander
- Serve with Basmati Rice
Instructions
- To a large frying pan add the butter and melt on a medium heat.
- Once melted add the onions and vegan chicken and fry for 5-8 minutes.
- Add the garlic and spices then fry for a further few minutes.
- Finally add the chopped tomatoes, coconut milk, a good amount of salt and pepper, then simmer for 20 minutes, stirring occasionally. Top with fresh coriander leaves and serve with rice.
