[ RECIPE ] No-Chop Bean Chilli

Ingredients
- 1 tablespoon Olive Oil
- 200g Frozen Vegetable Mix (or 60g each carrot, celery, onion diced)
- 1 teaspoon Dried Oregano
- ½ teaspoon Garlic Granules
- ¼ teaspoon Chilli Flakes
- 400g Tin of Chopped Tomatoes
- ½ Vegetable Stock Cube (crumbled)
- 1 tablespoon Maple Syrup
- 1 tablespoon Tomato Purée
- 1 teaspoon Paprika
- 1 teaspoon Ground Coriander
- ½ teaspoon Ground Cumin
- ¼ teaspoon Ground Cinnamon
- 1 Thyme Sprig (leaves only)
- 400g Tin of Black Beans (drained)
- 400g Tin of Cannelini Beans (drained)
- Salt & Freshly Ground Pepper
- 100g Frozen Sweetcorn
- Sprinkle of Frozen Coriander
Instructions
- Heat a heavy-based casserole dish over a medium-high heat and add the olive oil. Once the oil is hot enough add the vegetable mix and fry for 8-10 minutes, stirring occasionally.
- Next add the remaining ingredients except for the sweetcorn and coriander, and season well. Leave to simmer with the lid on for 15 minutes.
- Finally remove the lid and add the frozen sweetcorn before leaving for the final 5 minutes.
- Top with the frozen coriander and serve.
