Spiced Lentil topped sweet potatoes
Ingredients
- For the sweet potatoes:
- 2 sweet potatoes (cut lengthways into 3cm 'steak' slices)
- 1 tsp cumin
- 1 tsp smoked paprika
- salt & pepper
- For the spiced lentils:
- 1 onion (diced)
- 2 garlic cloves (crushed)
- 1 tsp ginger paste
- 1 tbsp tomato puree
- 1 tsp harissa paste
- approx 200ml passata
- ½ tbsp maple syrup
- 1 tsp dried coriander leaf
- 2 tsp cumin
- 1 tsp smoked paprika
- ¼ tsp cinnamon
- 400g tin chopped tomatoes
- 400g tin green lentils
- Fresh coriander leaves to garnish
- Serve with Couscous or quinoa
Instructions
- Preheat oven 180oc or air fryer 160oc.
- Cover the sweet potato slices in the spices, seasoning and some rapeseed oil
- Cook in the oven or air fryer for approx 30 minutes until cooked
- Meanwhile, fry the diced onion. Add the spices, garlic and ginger paste
- Add the rest of the ingredients and simmer for 30mins until the sweet potato is cooked.
- Add fresh coriander leaves and serve with couscous or pre-cooked quinoa
