I know, I write a lot of recipes about chicken, I am well aware of this and can promise you that very soon there will be some vegetarian recipes, fish ones and other meats and poultry being published on the site!
Perhaps it’s because when I first learned how to cook, this was my main staple and form of experimentation I would be most comfortable with in the kitchen. The key is to get comfortable with as many new ingredients as you possibly can. By throwing yourself in at the deep end it will make you a better cook and give you so much more possibility in the kitchen, you won’t be intimidated.
Even though this is another chicken recipe, take nothing away from how good it actually tastes. It is simple to make with a few ingredients and you won’t need to know much technical or advanced techniques to create it for yourself and your family.
It provides a smoky, barbecue-flavoured type of chicken with a light kick at the end. Try it and you’ll love it I’m sure.
(Serves 2)
6 x Chicken Thighs
1 x Yellow Pepper (sliced)
1 x Onion (sliced)
1 tsp x Paprika
Salt & Freshly Ground Pepper2 tsp x Smoky Chilli Chipotle Paste
Olive Oil
– Method
1. Cut each chicken thigh into three pieces and season with salt and pepper, then add the chipotle paste. Leave to marinate for 15 minutes if you have time.
2. Heat a large frying pan onto a medium-high heat with the olive oil. When the pan is very hot, add one of the chicken pieces. If you hear a sizzle, add the remaining chicken pieces, if not, remove the chicken piece and wait a few more minutes for the pan to reach the required temperature. Turn the chicken regularly and cook for 15 minutes.
3. After 5 minutes of cooking the chicken, add the peppers and onions and continue to cook.
Serve with Mexican Rice
