Vegan Chicken Gyros
 
 
Ingredients
  • For the vegan chicken marinade:
  • 1 pack of vegan chicken (e.g. This Isn't Chicken)
  • 2 tbsp unsweetened soya yoghurt
  • 1½ tbsp red wine vinegar
  • 1 tbsp garlic granules
  • 1 tsp oregano
  • salt & pepper
  • 1 red pepper (sliced)
  • 1 red onion (sliced)
  • For the tzatziki:
  • 5 heaped tbsp unsweetened soya yoghurt
  • ½ cucumber (grated)
  • Juice of ½ lemon
  • 1 garlic clove (crushed)
  • To serve:
  • Cherry tomatoes (halved)
  • Cucumber slices
  • White pittas
  • Chips
Instructions
  1. Marinate the vegan chicken with the marinade ingredients listed above for at least 45 mins
  2. Fry the peppers and onions until softened
  3. Add the vegan chicken and cook according to cooking instructions.
  4. Meanwhile, make the tzatziki.
  5. Fill the pittas with the vegan chicken mix, peppers and onions, tzatziki, fresh cherry tomatoes and cucumber and chips.
