[ RECIPE ] Vegan Butter Chick'n

Serves: 4 Servings
Ingredients
  • Knob of Dairy-free butter
  • 200g Plant-based Chicken
  • 1 White Onion (finely chopped)
  • 2 Garlic Cloves (crushed)
  • 1 tablespoon Curry Powder
  • ½ tablespoon Garam Masala
  • 1 teaspoon Chilli Powder
  • 1 teaspoon Ground Coriander
  • 1 teaspoon Ground Cumin
  • 1 Can Chopped Tomatoes
  • 400ml Light Coconut Milk
  • Salt & Pepper
  • Fresh Coriander
  • Serve with Basmati Rice
Instructions
  1. To a large frying pan add the butter and melt on a medium heat.
  2. Once melted add the onions and vegan chicken and fry for 5-8 minutes.
  3. Add the garlic and spices then fry for a further few minutes.
  4. Finally add the chopped tomatoes, coconut milk, a good amount of salt and pepper, then simmer for 20 minutes, stirring occasionally. Top with fresh coriander leaves and serve with rice.
