I just love putting together a healthy salad that’s not only good for me, but tastes great and keeps me full long after I’ve eaten.
I think the word ‘salad’ has often been overlooked within the men’s fitness industry, perhaps it’s been seen as quite a feminine dish to order at a restaurant, or cook at home?
Yet this salad packs more than enough protein to help you reach your fitness goals and would be a terrific option for those eating for their muscles, as well as their taste buds!
So I bring to you the Warm Lentil, Chicken & Porchetta Salad that’s full of flavour and very easy to put together. Remember, salads are for men too! Enjoy!
Serves 2 | Prep 2 Mins | Cooking 5 Mins
1 tablespoon Olive Oil
1 Red Onion (sliced)
4 Salad Tomatoes (quartered)
200g Puy Lentils
Salt & Freshly Ground Pepper
200g Leftover/Cooked Chicken Breast (sliced into chunks)
4 Slices of Porchetta (torn)
100g Mixed Salad Leaves
4 tablespoons Extra Virgin Olive Oil
2 tablespoons Balsamic Vinegar
Heat a medium-sized frying pan on a medium heat and add the olive oil.
Once the pan is hot enough add the red onion and tomatoes and cook for 3-4 minutes or until softened.
Add the puy lentils to the pan, along with some salt & pepper and cook for 1 minute to warm up, then remove the pan from the heat.
Place the mixed salad leaves in a large enough salad bowl and add the cooked/leftover chicken and porchetta, along with the content of the frying pan.
In a small jug or bowl, mix the extra virgin olive oil with the balsamic vinegar to form a vinaigrette then drizzle over the mixed salad and serve.
