In a large enough l bowl add the cornflour along with the tofu pieces and mix well until fully coated. Meanwhile heat a large frying pan on a medium-high heat and add a tablespoon of oil. Once the oil is hot add the tofu pieces and fry for 8-10 minutes, turn regularly and then set-aside.
Add an additional tablespoon of oil to the frying pan and add the sliced onion, fry for 3-5 minutes until softened then add the chickpeas, salt, pepper, smoked paprika and garlic granules and mix well. Cook for a further 5 minutes.
Next add the remaining ingredients and fry for a final 5 minutes, then serve.
