Cajun Spiced Chicken with Mango Relish & Paprika Potatoes

  • 2 Large Chicken Breasts
  • 1 teaspoon Ground Black Pepper
  • 1 teaspoon Garlic Granules
  • 1 teaspoon Onion Granules
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Table Salt
  • ½ teaspoon Cayenne Pepper
  • ½ teaspoon Ground White Pepper
  • ½ teaspoon Paprika
  • 100g Butter
  • Mango Relish
  • ½ Red Onion (diced)
  • ½ Red Pepper (diced)
  • ¼ teaspoon Chilli Flakes
  • 100g Mango Chutney
  • 1 Ripe Mango (peeled & diced)
  • Fresh Coriander (optional)
  • Paprika Potatoes
  • Handful of New Potatoes (halved)
  • ½ teaspoon Turmeric
  • 1 teaspoon Salt
  • Knob of Butter
  • 1 Garlic Clove (crushed)
  • ½ teaspoon Paprika
  1. For the chicken mix together the spices, salt and pepper in a small bowl.
  2. Flatten out the chicken breasts between two sheets of greaseproof paper until 2cm thick.
  3. Melt the butter and use a spoon or pastry brush to coat the chicken on one side.
  4. Fully coat the buttered side of the chicken using the spice mix then coat the other side with butter and add the spice mix again. Leave to the side for now.
  5. Next make the mango relish. On a medium heat fry the onion and pepper in a small frying pan until softened.
  6. Add the chilli flakes, fresh mango and mango chutney along with a splash of water. Simmer for 2-3 minutes then put into a bowl ready for serving. Garnish with a few coriander leaves if using.
  7. Place the halved new potatoes into a large enough saucepan along with the turmeric and salt. Add boiling water to the saucepan and place on a high heat for 15 minutes or until cooked.
  8. Whilst the potatoes are cooking place a large frying pan on the highest heat setting and once the pan is hot add each chicken breast (there is no need to add any additional fat or oil). Cook for 6 minutes then turn each breast over and cook for a further 6 minutes or until the chicken is cooked through.
  9. Drain the new potatoes using a colander then return them to the hob and add the butter, crushed garlic and paprika. Cook for 2-3 minutes and serve right away.
