Heat a large frying pan on a medium-high heat with enough olive oil to cover the base.
Add the red onion and chorizo for a few minutes before adding the garlic, chilli flakes, red pepper & broccoli. Continue to cook for a further 8-10 minutes.
Remove the contents onto a warm plate and add some additional olive oil to the frying pan.
Add the halloumi slices along with the black eye beans and fine beans. Fry for 2-3 minutes then add the lemon juice and zest.
Return the plate contents to the frying pan, mix well and add the fresh mint along with some sweet chilli sauce. Serve straight away.
