Place the wedges on a baking tray with the olive oil, salt & pepper and other spices and mix thoroughly until the wedges are fully coated and spread out evenly.
Place the baking tray into the oven and cook for 20-25 minutes, turning halfway.
With 10 minutes left heat a large frying pan on a very high heat.
Add some olive oil directly onto the steaks and sprinkle with freshly ground salt.
When the pan is very hot add the steaks and pan-fry for 5 minutes (rare) or 7 minutes (medium) - turning every 30 seconds.
With a few minutes remaining add the butter, rosemary and garlic.
When the time is up, remove the steaks and leave on a wire rack to rest for 5 minutes then serve with the wedges.
