Caribbean Sausage Casserole

Serves: 4 Servings
Ingredients
  • 8 Vegan Sausages
  • 2 Red Onions (sliced)
  • 2 Sweet Potatoes (peeled and cut into chunks)
  • 8 New Potatoes (halved)
  • 6 Fresh Tomatoes (halved)
  • 3 teaspoons Agave Syrup
  • 1 Mango (peeled and cut into chunks)
  • 40g Roasted Red Peppers
  • 2 tablespoons Jerk Seasoning
  • 2 tablespoons Olive Oil
  • Salt & Freshly Ground Pepper
  • Handful of Fresh Parsley
  • Serve with Fresh Salad
Instructions
  1. Prick the sausages and add them to a large roasting tray.
  2. Pre-heat the oven to 200C (fan-assisted).
  3. Add the red onions, potatoes, tomatoes, agave syrup, mango, peppers, along with the jerk seasoning and olive oil. Toss the ingredients well so that they are well mixed with the seasoning, along with the salt and pepper.
  4. Place the roasting tray in the oven for 30 minutes, turning the ingredients halfway so that they don't stick and are evenly cooked.
  5. Once the time is up remove the tray and add the fresh parsley.
