[ RECIPE ] No-Chop Bean Chilli

Ingredients
  • 1 tablespoon Olive Oil
  • 200g Frozen Vegetable Mix (or 60g each carrot, celery, onion diced)
  • 1 teaspoon Dried Oregano
  • ½ teaspoon Garlic Granules
  • ¼ teaspoon Chilli Flakes
  • 400g Tin of Chopped Tomatoes
  • ½ Vegetable Stock Cube (crumbled)
  • 1 tablespoon Maple Syrup
  • 1 tablespoon Tomato Purée
  • 1 teaspoon Paprika
  • 1 teaspoon Ground Coriander
  • ½ teaspoon Ground Cumin
  • ¼ teaspoon Ground Cinnamon
  • 1 Thyme Sprig (leaves only)
  • 400g Tin of Black Beans (drained)
  • 400g Tin of Cannelini Beans (drained)
  • Salt & Freshly Ground Pepper
  • 100g Frozen Sweetcorn
  • Sprinkle of Frozen Coriander
Instructions
  1. Heat a heavy-based casserole dish over a medium-high heat and add the olive oil. Once the oil is hot enough add the vegetable mix and fry for 8-10 minutes, stirring occasionally.
  2. Next add the remaining ingredients except for the sweetcorn and coriander, and season well. Leave to simmer with the lid on for 15 minutes.
  3. Finally remove the lid and add the frozen sweetcorn before leaving for the final 5 minutes.
  4. Top with the frozen coriander and serve.
