Curried Parsnip & Apple Soup

Now that the Winter is well and truly here (that is if you live in the UK where it’s cold almost the entire year anyway!) I thought it was time to post a very easy (and tasty!) soup recipe. 

This Curried Parsnip & Apple Soup recipe combines one of my most favourite ingredients, the Parsnip. Every time I cook with them I get angry with myself because I don’t use them more often, and yet the carrots always get a look in! 

I hope you enjoy this very easy and delicious recipe. The cumin and curry powder give a nice spice, which combines really well with the sweetness of the apple.

If you don’t wish to cook all of it in one sitting, feel free to place in a container and leave in the fridge for a few days or the freezer if you’re not using it in the week. Enjoy! 

 

Serves 2  |  Prep 20 Mins  |  Cooking 15 Mins

Olive Oil
1 Onion  (chopped)
2 teaspoons Ground Cumin
1 teaspoon Curry Powder 
600g Parsnips (peeled & chopped)
600ml Vegetable Stock
3 Gala Apples (grated)
Salt & Freshly Ground Pepper

Optional:  Crusty Bread

 

Place a large saucepan on a medium-high heat and then add the onion along with some salt. Cook for a few minutes unit the onions begin to soften. 

Add the cumin and curry powder along with some more olive oil and cook for a further minute. 

Stir in the parsnips and add the stock and 200ml boiling water and bring to the boil by placing the lid on the pan and increasing the heat. 

Once boiling, reduce the heat to medium and allow to simmer for 12 minutes. 

Remove from the heat and add in the grated apple. 

Once cooled, use a hand blender to mix until smooth, then return to the heat and serve with crusty bread.
